The proprietors of this new restaurant plan to take advantage of their market research, which indicates there is a great interest and very little competition in a specific area of New Rochelle for a pasta and pizza restaurant.
EXECUTIVE SUMMARY
Corleone Pasta and Pizza will be an eat-in, carry-out restaurant, specializing in evening and weekend leisure dining. New Rochelle is a multicultural city with a lot of Italian descendants. The downtown, where Corleone Pasta and Pizza will be located, is a commercial area with lots of businesses, and a great spot to entertain.
What makes Corleone Pasta and Pizza different as a business proposition? New restaurant openings are known to be risky. What have we done to neutralize these risks and assure success?
First, we have identified and unfulfilled market through some surveys, and marketing study in the area of New Rochelle, and close cities like Pelham, and Larchmont. Our research has demonstrated that 87% of the sample population that we used for our research are very interested in our business proposal. Through this research, we have learned that people are unhappy with the quality of food and service offered by other related businesses, and they would be happy to patronage a good pasta and pizza restaurant with an excellent customer service.
The research of the population demographics of this area, also revealed that people tend to go out to eat as frequently as three times per week.
New Rochelle is a very viable commuting area. It has the Bee Line transportation to closed cities like Pelham, Larchmont, Mamaroneck, White Plains, Eastchester, Bronxville, Mount Vernon. Also has the New Haven Line train station that connects from Grand Central to New Haven, Connecticut. Management has identified a commuting market that frequents the downtown New Rochelle area, due to transportation availability, and very closed to major highways like Interstate 95, Hutchinson Parkway, and Cross County Parkway.
Corleone Pasta and Pizza will be a great addition to the local area, offering pasta and pizza from scratch not very common in the area. We want to offer the true flavors of the Italian cuisine related to pasta and pizza.
Harold Lambert; Indrajitsinh Dilipsinh Mahida; Justin Marshall; and Oleska McKenna are experienced restauranteurs, and entrepreneurs with formal training in the food service business, and Information Technology business. Mr. Mahida, and Mr. Marshall met in Switzerland. They used to work at the UBS headquarters in Zurich in the IT department. Mr. Lambert, and Ms. McKenna met at Le Cordon Bleu in Paris, France. They own three restaurants in Paris, Rome, and Barcelona. They have already ten years of experience and success.
As an anticipated capitalization, a budget of US$ 450,000, including US$ 150,000 owner's equity along with US$ 300,000 borrowed capital. Owner's equity derive from joint capital of the four business partners.
Our projections anticipate a first year net of US$ 91,000 on sales of US$ 192,000.

THE COMPANY— PRESENT SITUATION
Corleone Pasta and Pizza proprietorship will be Harold Lambert; Indrajitsinh Dilipsinh Mahida; Justin Marshall; Oleska McKenna operated business. All of the business partners from Corleone Pasta and Pizza will bring experience in food service and information technology. We need to incorporate technology to be a competitive business. The concept of Corleone Pasta and Pizza is to offer gourmet pizza with a house signature pizza, and traditional Italian pasta dishes. Our menu will be selected according to the season. We want to follow the farm to table trend, offering healthy and delicious fresh food. It is expected that at least 50% of the business will be carryout. An outside dining tables facility is also planned for nice weather.
We want to offer a selected menu. We do not want to annoy customers with a long menu of many pages that consume time.
The business will be located in the New Rochelle downtown neighborhood. This is a high profile community with a high concentration of residential units like Avalon on the Sound, and Trump building. Also many residential apartment buildings near the beach and parks. The area has restaurants, bars and bistros.
The business partners will continue working as consultants. Ms. McKenna, and Mr. Lambert are professional chefs who will be in charge of the kitchen and all related with food and beverage.

OBJECTIVES
Corleone Pasta and Pizza will originally target the leisure and recreational dining market. This will heavily emphasize Friday, Saturday, and Sunday business. For the first 12-month period, it is expected that the business will remain closed on Monday, opening from 4:00 PM to 11:00 PM Tuesday through Thursday, 11:00 AM to 11:00 PM Friday and Saturday, and 11:00 AM to 9:00 PM on Sunday. In addition to the local trade, these hours allow us to capture the after-work commuter as well as those stopping off for an Italian cuisine and an excellent service.
Friday, Saturdays, and Sundays afternoons and evenings, present great opportunities for the leisure dining trade, and our menu and carry-out promotions will be designed to maximize these opportunities.
The downtown New Rochelle area also is known as a great business lunch community. Corleone Pasta and Pizza could be a great addition to the market. For now, we do not intend to compete for lunch business except on Friday when most New Rochelle restaurants are hopelessly overloaded. A special luncheon menu is presently being refined for possible inclusion with an expansion of hours during our second year.

MANAGEMENT
Harold Ross Lambert will head the group of partners composed by Indrajitsinh Dilipsinh Mahida; Justin Marshall; and Oleska McKenna , as he devotes fulltime to the planning, installation, and start-up of Corleone Pasta and Pizza. Ross, 43, holds a Bachelor’s Degree in Hospitality Management from Le Cordon Bleu, France. Upon graduation, he entered his chosen field as assistant chef at Le Parissien under the original management of Chef Gusteau. He stayed at Le Parissien for 3 years, gaining experience in all phases of experience in food preparation and kitchen management. When Le Parissien closed in 1999, Mr. Lambert went to Tuscany, Italy to learn about Italian cuisine. It was a great experience, rich in knowledge and practice. After three years in Europe, he returned to the U.S. an opened his first business, a French fusion cuisine in Scarsdale, NY. After a great success, he, and Mrs. McKenna open the same restaurant concept in tree European cities, Paris, Rome, and Barcelona.
Oleska McKenna, 35, also has extensive experience in food service and hospitality fields. As a young person, she started working in fast-food operations. When she finished her A.S.S. in culinary arts, she decided to get more cooking training. She chose Le Cordon Bleu in Paris, where she met her future business partner. After her educational trip to Paris, she decided to follow Mr. Lambert to Italy to learn the secrets of Italian cuisine. The time was well invested because she gained experience, and had the opportunity to work with experienced and prestigious Italian Chefs, as Chef Ripolli, Chef Francescolo and Chef Batalli. Back in the U.S. she and Mr. Lambert opened their first business and the rest is history.
