Abstract
The Cincinnati Seasonings Supply Chain is a mockup of a supply chain to support a company that designs and markets food seasonings and sells its products in stores throughout the United States. The purpose of the case study was to familiarize students with setting up a supply chain and simulate its operations. The thought process was to define the product and set up the facilities, vehicles, and routes to have an effective and efficient supply chain. The challenge for the entire exercise was to get the Supply Chain to run continuously for thirty days or more, without interruption or running out of product. Cincinnati Seasonings is a family owned and operated business; the founder was born and raised in Ohio. Cincinnati is famous for its chili but these seasonings add a special spice and flavor to the Chili that no other seasoning offers. Cincinnati Seasonings has done very well and is expanding but the company is always searching for ways to keep costs down and figure out how to run the operation as efficiently as possible.
Simulation
The purpose of the simulation was to create a supply chain to support the Cincinnati Seasonings business and see how the inventory was transferred through different facilities. After initially setting up the Supply Chain, it was very difficult to keep it running without interruption for more than twenty to thirty days at a time. In order to have the Supply Chain run consecutively, you had to create or delete product, add trucks, routes, and/or facilities to maneuver the supply chain. After running the simulation, you were able to see where the bottleneck occurred and what needed to change.
Accomplishments
After creating this Supply Chain simulation, the realization set in that the job functions of managers can be a very overwhelming responsibility. They are responsible for getting products from locations,

...humans do at least three times a day. We live in a world where food is necessary for the body and we are responsible for our daily intake. We decide what to eat, how to cook it, and how it will affect our bodies. The three main differences between fresh foods and canned foods are flavor, health benefits, and cost. The major difference between these two foods is flavor and taste. Fresh foods have great flavor and taste because they keep their natural freshness. Canned food however, lacks a lot of its flavor due to having other chemicals added; taking away that natural flavor. It is logical to think that the fresh foods will have a better taste and flavor when consumed because of the time in which they have been prepared with natural seasoning of personal choice. Comparing both types of foods we notice another difference. Canned foods lose some of the original fresh food nutrients when stored. It is made with many conservatives and chemical factors that prolong the shelf life and the apparent freshness of the food. If consumed too much, it could become toxic. Another difference between the two types is the cost. Canned foods are much more expensive than fresh foods. The benefit of buying canned foods is they are easier to find. For example, in a grocery store; instead of choosing the fresh foods, people choose canned foods; simply because less time is needed to prepare. Just open and serve. As we can see it comes down to personal choice. Based on the time each person has...

...CACM 105 Pg 15 #2 From taking this culinary program I'd like to gain presentation skills, improve my pallet, increase my knife skills, and be more familiar with the broader kitchen equipment that I don't have access to at home. Presentation is as equally important as the flavoring of you food. When I cook at home, I don't tend to worry about presentation because I don't have the proper tools. I plate all my foods leveled straight on the plate, I've never tried layering nor leaning foods on each other; I just don't know what works. My Pallet, is decent but nowhere near to where I want it to be. I am familiar with foods but having a really good pallet will help in creating a menu. Figuring out the perfect seasonings that complement each other can boost up you dish. Thinking about the flavor and "tasting" it is really a nice ability to have. My knife skills are your average Joes. I know how to cut a fish but getting a clean cut, I'm just not there yet. I'm still unknowledgeable as to what the different knifes do, from a paring knife to a boning knife to a cleaver. The French or chef's knife is all I'm familiar with. Lastly, being familiar with all or majority of the kitchen tools and what they do, can increase the variety of dishes you can prepare. At home I have the universal pan and pots, the usual at home kitchen equipment. In this class I will have access to a more variety of equipment that I can get my hands on.
