Experimental Design
Independent Variable: Amount of sucrose in each solution
Dependent Variable: Percent difference in mass of each egg after soaking in the sucrose solutions
Experimental Question: If we change the amount of sucrose in each solution that the eggs will sit in, how will this affect the difference in the mass of the eggs?
Hypothesis: If an egg is placed in a 4 M sucrose solution overnight, then that egg would lose a greater percentage of its mass than the eggs placed in any other solutions tested, because the solution it is in has a higher concentration of solute (sucrose) which makes the solution hypertonic so the water will diffuse out of the egg.
Control: Distilled Water (0.0 M solution)

Obtain two plastic cups and label each one with your initials and the solution your group was assigned
2. Gently rinse the egg off under a gentle stream of water. Do not set the egg down on the lab table. Make a couple of qualitative observations on the egg and then mass the egg on the electronic balance. Record the observations and the mass in your notebook.
3. Set each egg in the cup with the correct solution. Add hough solution to the cup to either cover the egg or get the egg to float.
4. Let the egg sit in the solution overnight.
Day 3
The next day, take each egg out individually and for each one, rinse the egg off under a gentle stream of water and drip dry slightly. Do not set the egg on the lab table
2. Make qualitative observation and mass the egg. Record these in your notebook.
3. Set the eggs where instructed.
4. Make your calculation and place your data on the board with the rest of your class’s data. (Before mass, after mass, difference in mass, and percent difference in mass.)

The common organic compounds of living organisms are carbohydrates, proteins, lipids, and nucleic acids. Each of these macromolecules (polymers) are made of smaller subunits (monomers). The bonds between these subunits are formed by dehydration synthesis. This process requires energy; a molecule of water is removed (dehydration) and a covalent bond is formed between the subunits (Fig.1). Breaking this bond is called hydrolysis; it requires the addition of a water molecule and releases energy. Each class of these macromolecules has different structures and properties.
