TWIX POPCORN
Ingredients

• Recipe: Snickers Popcorn
• 4 quarts air popped corn (about 2/s cups of kernels)
• 1 cup salted butter
• 2 cups light brown sugar, packed
• 1 teaspoon salt
• 1/2 cup light corn syrup
• 1 teaspoon baking soda
• 1 cup salted peanuts
• 30 "Fun Size" Twix bars coarsely chopped
• 3 oz melted semi sweet chocolate (optional)
How to Make
1. Preheat oven to 200°
2. Over medium heat boil butter, brown sugar, salt and corn syrup for 5 minutes.
3. Remove from heat and stir in your baking soda.
4. Pour over your popcorn and stir to coat evenly.
5. Transfer to waxed paper lined counter and sprinkle peanuts on top. Stir until all is coated evenly.
6. Transfer popcorn into a large roasting pan and bake for 1 hour 15 minutes, stirring every 15 minutes.
7. Remove from oven and stir in your coarsely chopped Snickers. Return to oven for 3 more minutes so the Twix begin to melt slightly into the popcorn.
8. Remove from pan and transfer popcorn back to wax paper to cool.
9. Drizzle melted chocolate on top of popcorn if desired.
10. Let set and store in an airtight container.

SPICY BACON POPCORN
Cut up and fry one package of center cut bacon, set aside.
Make the caramel recipe as above for the Twix popcorn, but add ½ tsp cayenne pepper in at the same time you add the baking soda.
Added the bacon to the caramel and then coat the popped corn.
Bake in the oven as above.
Depending on the freshness of your cayenne pepper, you need to sprinkle more on top to taste after it is done (I did).
Don’t add the twix or chocolate (duh)

...330 grams sashimi-grade tuna, kept chilled  oil for searing 1 Mix black pepper and ginger in a small bowl. Pat this mixture on all sides of the tuna. Set aside. 2 Over high heat, heat a non-stick pan with 2 tablespoons oil until almost smoking. Using tongs, place tuna in the searing hot pan and sear for about 2 seconds, or until the tuna side that’s in the oil turns opaque. Turn the tuna on its other side and sear again for 2 seconds. Repeat until all sides have been seared in the hot oil. Immediately remove from heat. Let cool then refrigerate before slicing. 3 Make dipping sauce: Mix 3 tablespoons soy sauce and the juice of 1 calamansi. Place in a small bowl. Serve with the sliced seared tuna and a pat of wasabi, if desired. Spicy Tuna Ceviche Recipe Calamansi juice is used instead of the classic vinegar in this citrusy version of the popular dish. Serves 2 Prep time 10 minutes  1 tablespoon chili garlic sauce 1 teaspoon white vinegar 1⁄4 cup calamansi juice 1⁄2 small red onion, sliced thinly  salt and ground black pepper, to taste 330 grams sashimi-grade tuna, chilled 1 Place chili garlic sauce, vinegar, calamansi juice, onion slices, and salt and ground black pepper in a jar, close, and then shake until well incorporated.
