Uitleg current state
Het proces dat wordt besproken handelt zich over de aankoop en verwerking van vlees, brood, salades, fruit, aardappelen … om hamburgers, cheeseburgers, kippenvlees, frieten, ontbijtproducten, frisdranken, milkshakes en nagerechten te produceren.
Het proces begint bij het bestellen bij de leverancier. Er wordt een leveringsbon opgemaakt, factuur ontvangen en betaald. McDonalds bestelt altijd dezelfde maar juiste hoeveelheid. Probleem is dat men toe komt tot vrijdag en men uit voorraad is in het weekend. Dan moeten we wachten tot maandag omdat er elke maandag een nieuwe levering komt (lightning box/verbeterpunt).
Eens de goederen binnenkomen, wordt het opgeslagen in de voorraad door twee werknemers. Soms gaat het vlot, soms gaat het minder vlot (lightning box). Het probleem is dat de controle tijdens het opslagen gebeurt. Als men de controle voor de opslag doet, dan kan men dit direct meegeven met de leverancier (lightning box). Het opslag zelf moet wel op dezelfde dag gebeuren. De goederen komen altijd op dezelfde uur aan, dus 18u, en moet voor 21u gedaan zijn. Gebeurt dus niet altijd zo, omdat men bijvoorbeeld met te weinig WN’ers de opslag doen. Opslag duurt dus 1 dag.
Eens de voorraad bijgevuld is kan de dag beginnen: de kassierster moet binnen de 5 min: de klant ontvagen, bestelling opnemen en bestelling afgeven. Probleem: gebeurt niet altijd wegens nieuw personeel die niet goed is opgeleid, als het super druk is kan het ook vele langer oplopen,... (lightning box).
De bestelling wordt bij het opnemen van de bestelling onmiddelijk door verstuurd naar de keuken. Zij moeten de bestelling ook proberen klaar te zetten in 5 min: 1 min gril tijd (voor het vlees), 3 min. (voor vis),... elk soort vlees heeft zijn eige griltijd. Tijdens het grillen maken ze het broodje klaar: broodje in toaster/niet in toaster, sla op broodje, saus, na het grillen de vlees erop, en dan in doosje steken en onder de verwarming zetten.
Vlees zit normaal opgeslagen in de vriezer met de juiste temperatuur.
Daarna neemt de kassierster de juiste bestelling met frietjes en drank en geeft menu aan de klant. pull-principe vanuit de klant waarop wordt gereageerd met bakken/snijden van vlees en servering.
Hoe bereken ik het aantal sec/shift voor de taktijd?

De klant koopt dus een product om de .. dagen. Er is dus genoeg/niet genoeg speelruimte om aan de vraag te voldoen.
