CONSUMER PROFILING USING LADDERING

a. Attributes-Consequences-Values Summary

There were several key attributes, consequences, and values associated with each of the group discussed during our interviews. The attributes are related to the extensive food menu, the actual layout and décor of the bar, and the location. The consequences are reasonable prices, an environment that appeals to all ages that are looking for different experiences, and convenience regarding the location. College age students enjoy the extensive food menu (attribute) that may provide the benefit of more price sensitive options (consequence) that allow them to have a good time without hurting their wallet (value). Young adults are able to take their children to the Tavern to enjoy a good meal and also have a wide selection of entrees to choose from (attribute) that allows them to be with their children during the dinner hour (consequence) and stay close to home and school and get a good meal for an affordable price (value). Older adults enjoy the option of bar area or quiet dining room (attribute) which provides them with the option of a casual dinner and drink or fancy dinner date (consequence) which allows them to enjoy this new restaurant conveniently located on this side of town (value).

b. Customer Profiles

Customer Profile #1 AMANDA

Amanda is a 22-year-old Junior at the University of Minnesota Duluth. Amanda was a volleyball player in high school and received a scholarship to attend UMD where she has continued with her volleyball career, while also pursuing a Marketing degree. Amanda wants to work in Marketing, she’s not sure what she wants to do yet; but she does know she wants to experience the world and do a lot of traveling. Although her parents don’t agree, and she does everything she can to make them happy and proud, she sees herself as a free spirit who has a voice that should be heard, and wants to find herself on her own. She values hard work, teamwork, a strong connection with her friends and teammates, and she especially values her free time. After a long day of class, volleyball practice, or homework, Amanda wants time to spend with her girlfriends, usually girls from the volleyball team but she also has close friends she went to high school with, with whom she enjoys spending time. She loves throwing on a cute top and some casual jeans to go listen to good music(preferably 90’s hits-because who doesn’t love the 90’s?), spend time talking and laughing; but also being careful with her money and staying healthy and responsible. When Amanda goes to a restaurant, she is looking for discounts/specials so she can get the most for her money and is also looking to try new things and be daring with what she orders. She cares about the food, but the environment is far more important. As long as the restaurant has a fun, eclectic setting and is busy with other college students, she is in her element.

Customer Profile #2 ROBERT

Robert is a 73-year-old man who has been retired for the past 5 years. Robert owned a custom home building business for 35 years, which he has now passed down to his two sons. Robert and his wife, Beth, are both enjoying retirement in the Duluth community by volunteering at their church, golfing, going to the gym, attempting yoga, learning how to use their kindles the grandkids gave them for Christmas, and seeing all the most beautiful and popular places in Duluth. During the winter, they hunker down and spend more time at home because of the weather conditions and are hoping to buy a second home down in Arizona. During the summer they enjoy taking their family and friends out for dinner and drinks and enjoying each other’s company. Robert has always lived simply: he provided a beautiful home for his family and always had food on the table. Now he wants to use his hard earned money to treat the people he cares most about in his life. Robert prefers casual, so he throws on his loose button up and jeans and chooses a restaurant that is known for their good variety of food, casual dining, and excellent service. Robert finds value in the entire experience: from the lighting to the hardwood floors. The openness of the bar area to the closeness of the quiet dining area. He prefers both booths and tables, although it depends on his mood that day. He also finds value in the service and wants to go to a restaurant that is known for their knowledgeable servers, caring managers, and efficient system. Robert is all about making everyone comfortable and happy, so he appreciates restaurants that are kid friendly and have multiple seating areas depending on who he takes to dinner.

Customer Profile #3 SUSAN

Susan is a 32-year-old single mother with two young children. Susan was born and raised in Brainerd, Minnesota and moved to Duluth about 5 years ago to work for her brother’s company and be closer to her family. Susan has always seen herself as someone who can handle anything, conquer whatever challenge is thrown her way. She pursued her AA degree at a small community college and then spent time traveling before she became pregnant with Rose. Susan is outgoing, social, and always happy, bringing her kids everywhere with her and making them her biggest priority. Rose and Jack, who are 6 and 3 years old, are Susan’s pride and joy. Susan wants most to impress her friends, who didn’t believe she could handle two kids on her own, and she dreams of eventually being able to be a stay at home mom working direct sales and making a residual income. Susan has a lot of flexibility working for her brother and enjoys her days off taking Rose and Jack to the park, the beach, and other fun locations in Duluth. When she is looking for a restaurant, she is looking for somewhere where she can relax and enjoy a good meal and also an environment that is kid friendly, offering a casual environment and appropriate seating for two young children. Although her kids are her life, she also enjoys going out with her sister-in-law for a couple drinks and some “grown up” time. In this case, she is looking for a place that she can throw on her high heels and a cute pair of jeans and enjoy local live music, get a couple cocktails during happy hour, and enjoy a variety of different foods.

c. Preliminary Marketing Insights

Based on what we found in our interviews, there is a large variety of people who are customers at the Tavern. Depending on the time of day, their main groups are college students; young families with little children; and older, retired adults. All these different groups of people are looking to get a different experience when they go out to eat, and the Tavern has created and is working on maintaining an environment that appeals to each market. College students are looking for a place that has good prices, a fun environment, and something new where they can go with friends. Some marketing insights we took from this is that the Tavern should have food and drink specials and heavily advertise them and also different loyalty programs(although they already do with their app) and they should focus on having different events such as live music and holiday specific specials. With families, they are more concerned with an environment where they can go with their children and feel relaxed, while also getting the most for their money. The Tavern has this environment and should focus marketing strategies towards creating awareness of this environment, because a lot of people believe the Tavern is a college restaurant designed for college students. Older, retired people are looking for somewhere to go to enjoy a nice, quiet lunch/dinner with good quality food and service. They also are looking for somewhere to take their families to treat them to a nice dinner. The Tavern sees the majority of this group during the day for lunch and some at night for dinner. We believe they should look at marketing different lunch items and provide different lunch specials to appeal to the day time group, and also make sure the community knows that the Tavern has a dining room that is quieter, a 4-seasons porch where the sun shines during the day that is also more quiet, and can sit outside, during the summer, by the fire and enjoy the beautiful weather.
