Eating healthy produce anytime
Everybody likes to eat but not everyone likes the time it takes to cook. It is much easier to buy fast food or “open a can”, thus compromising our health and nutrition. With all the preparation time even eating becomes a chore. Chopping vegetables and fruit can be a discouraging tedious first step in the cooking process. The time it takes to cook them just as discouraging. While it is true fresh produce contains more nutrition than canned produce; frozen produce is very similar in nutritional value and is a convenient alternative.
There are daily amounts of nutrients recommended for intake to help maintain our bodies. Produce provides us with some of these and fresh produce provides it in higher amounts than that provided when eating it from a can. Unfortunately, not all fresh produce is available year round and eating the same varieties that are available (these are called seasonal items) can become boring. The produce that you discover not in season is usually much higher in price and often lacks the proper nutrients because of early picking and shipping from miles away, including overseas. When buying fresh produce it is best to buy locally. Again this is because of the time it takes to transport most produce plays a significant role in how many nutrients are lost. According to Preston Andrews, PhD, a plant researcher and associate professor of horticulture at Washington State University, "The nutrients in most fruits and vegetables start to diminish as soon as they're picked, so for optimal nutrition, eat all produce within 1 week of buying," (Burns, 2010, p. 50). In this case even shopping becomes an added chore since one would have to shop at least once per week to avoid waste.
Even when farmer’s markets are closed for the season and seasonal items are not available we can still enjoy fruits and vegetables of choice. Frozen
