Abstract
In my Arizona family we have a tradition were on the birthday of one of the males in the family, the other men in the family pay for the night out. It can become a long night as you can imagine, but the birthday boy has a good time. The plan is usually Hooters for dinner and who are we kidding the scenery, a movie, happy hour and or a gentlemen’s club after. Contrary to popular belief, Hooters does have very good food and the service is good. The waits are not long even doing peak hours and you don’t feel like your needs are not being met. I will discuss the operation process for beer and food at Hooters and any areas I think that can be improved in the process, if any. The operation Hooters currently has in place is very efficient and effective to the lay person. I think that their approach is how most diners handle peck hours, which is separate the floor into smaller manageable areas and constantly check the clients. The servers watch their client’s drinks and food levels periodically to make sure that they are not lacking. There are always a set number of clean glasses ready for beer refills, because that is one of Hooters primary products. They also keep a specific number of staff members at the facility doing peak hours in order to avoid customer service issues.

Hooters & Hot Wings The Hooters we visit is medium size. One complaint I have about the Hooters is that the bathroom is small and can only accommodate two customers, male or female. Hooters has two products that are their primary focus, Beer and Hot Wings. When the waitress sits you, what you will notice is she will ask you what kind of beer are you drinking? Hooters offer other beverage selections but the servers are instructed to push the adult drinks. You...

Excellent Manager Manifesto

...MEMORANDUM/POLICY "THE CMC-HOOTERS MANAGEMENT MANIFESTO" GUIDE TO HOOTERS RESTAURANT OPERATIONS EXCELLENCE By James E. Cornett III, with J. Philip Cornett All Rights Reserved Copyright 1998 Created: December 1996 Last Updated 11-04-10 MANAGER RESPONSIBILITIES This memo will highlight responsibilities for the Hooters Manager position. Many duties are for the position of General Manager. However, any "assistant" manager performing these duties well will progress and perform much better than one just merely going through the motions. This set of philosophies and operating policies was derived from the CMC-HOOTERS GENERAL MANAGER MANIFESTO. OVERVIEW There are many responsibilities that will be defined in terms of mechanical responsibilities.... But more important than that, and therefore things that I will list first, are philosophical and attitudinal responsibilities. Most managers can run a typical restaurant. But Hooters is not a typical concept or restaurant operation. It takes a special person to manage a Hooters and an even more special person to be a excellent manager of a Hooters Restaurant. You have to run the restaurant like it's yours and the GM's to own and run, working as a team, and make yourself only settle for being the BEST in town. Nothing second rate. You must know that settling for mediocrity means death to the restaurant, any potential bonuses, and death to job security and career growth. That means always concerning......

He holds his head low over his double Scotch, but every few minutes he glances up and out, behind him, towards the door. A fine sheen of perspiration glistens under the strip-lights. He lets out a long, shaky breath, disguised as a sigh, and turns back to his drink. ‘Hey. Excuse me?’ I look up from polishing glasses. ‘Can I get another one here?’ I want to tell him it’s really not a good idea, it won’t help, it might even put him over the limit. But he’s a big guy and it’s fifteen minutes till closing time and, according to company guidelines, I have no reason to tell him no, so I walk over, take his glass and hold it up to the optic. He nods at the bottle. ‘Double,’ he says, and slides a fat hand down his damp face. ‘That’ll be seven pounds twenty, please.’ It’s a quarter to eleven on a Tuesday night and the Shamrock and Clover, East......
