Estudio de Tiempos:
Realizamos un estudio de tiempos de empacado del café seco en cada saco, dentro de las instalaciones de la empresa Café de Altura, en el área de Secado y empacado. En la siguiente tabla se muestran los tiempos reales obtenidos mediante su medición. El Tiempo de Ejecución se estableció en un 90%. El tiempo que se le concede al personal es de 30 min, más un tiempo de retraso de 40 min. Se tomó una muestra del promedio del tiempo de 10 diás.

Determinación del tamaño de una muestra necesaria para el proceso productivo

La norteamericana comercializadora de café procesado Starbugs, le pide anualmente a Café de Altura una muestra de café para determinar la calidad del café (Grano arábigo entero grande, tipo oro), sugiere que el tiempo de captado de los granos en la salida de la maquina sea de 30 minutos de manera ininterrumpida. Esta práctica se realiza en la planta de manera empírica y sin ningún control. Se necesita saber cuál es número mínimo de ciclos que serán medidos.

Según nuestros cálculos los resultados son los siguientes:
De acuerdo a la tabla 8.4 de ciclos de tiempo ubicada en la página 150 del libro Investigación de operaciones , usando 30 minutos de tiempo por ciclo obtenemos que el número mínimo es de n= 4 ciclos

Gráfica de Actividades Hombre-Maquina

En el beneficio café de Altura Ubicado en San Pedro de Pérez Zeledón. A uno de los operadores encargados de la sección de secado le toma 1 minutos montar un saco vacío en la boquilla de llenado de una de las dos máquinas de empaque de café tipo pergamino, y 2 minutos acomodarlo en los estantes de bodega después de llenarlo. El Tiempo que se tarda en llenar cada saco es de 3 minutos. Según estudios realizados por el Propietario, los costos son de $12 por hora para el Operario y $75 por hora para la máquina.
Determinaremos los siguientes puntos para obtener cifras precisas: 1. Construir una gráfica hombre-máquina para determinar la situación más eficiente de 1 hombre y 2 máquinas. 2. Determinar cuál es el ciclo de tiempo. 3. ¿Cuál es el tiempo ocioso del trabajador por cada ciclo? 4. ¿Cuál es el tiempo ocioso total por ciclo para ambas maquinas? 5. ¿Cuál es el costo total por hora? 6. ¿Cuál es el costo total por ciclo? 7. ¿Cuál es el costo de tiempo ocioso por hora?

Conclusión:
Mediante los cálculos apropiados logramos determinar que la empresa está perdiendo $4 por hora por ciclo, debido al tiempo en que el trabajador se encuentra ocioso, por lo tanto es recomendable reorganizar algunas tareas con el fin de reubicar el trabajador en alguna labor durante el tiempo que se encuentra ocioso.

Balanceo de Línea de Distribución.

En el siguiente diagrama de Procedencia indica las actividades de empacado del café luego de su salida de las máquinas de secado, de acuerdo con las estaciones y sus respectivas actividades. Esta es línea trabaja 12 horas al día produciendo 8 000 kg de café por día

Conclusión:
Según los estudios realizados anteriormente y los datos obtenidos de eficiencias, logramos detectar un problema de planificación de la producción en el proceso de empaque del café, en donde actualmente solo se tiene trabajando a 5 personas, y la cantidad necesaria es de 8 para toda la línea que consta de 4 estaciones de trabajo. Es conveniente seguir estas recomendaciones para que la productividad sea la deseada, y los niveles alcancen el tope esperado.
