I try to eat an apple every day at work or on the way home from night class as a way to avoid unhealthy snacking. I also get some applesauce in with a few meals every week. This time of year I definitely don’t eat as much as I do during the summer, when I can just go outside to where the blueberries or strawberries are growing and just eat until I’m full. I don’t crave fruits and vegetables during winter they way I do in the summer. I will definitely be looking for more ways to incorporate both into my day, as I’m sure it would greatly improve my energy levels for my long work days. I probably only get a half cup of vegetables in during the work day, if I snack on carrots, and another serving at dinner if I make it home in time to eat. The trip, organized by my father himself, usually consists of 50-70 high-school age teens and anywhere from 15-20 adult leaders that drive the vans we take to the worksites.
