Colombian Food vs. American Food
Food is more than what we eat. For many families and cultures, traditional meals are passed down from one generation to another. But families do not just teach a recipe; instead they have their own story of how a dish became such an important part of the family, culture, and country. For example, it is important to know who started cooking it, the secret of how to make it the way grandma did, or that special ingredient that makes the difference. Food is the best way to learn about a country or a region. For instance, Colombian food is very traditional and carries the legacy of many generations, from the first native people to the colonists and the influence they had in our cuisine. The type of food served in a region is influenced by that area’s fauna, flora and climate. For example the main dish in the capital of Colombia, Bogota, is Ajiaco; a type of soup made with potatoes, chicken, herbs, and sour cream, served with rice and avocado. In the Caribbean coastal region people eat more fish, lobster, and the typical coconut rice that goes with every meal, from rice and eggs in the breakfast, to fish and plantain for lunch or dinner. In Medellin, the second largest city in Colombia, Bandeja Paisa is the main dish. It contains beans, rice, beef, sausage, friend eggs and fried pork skin.
