I. Khái quát tỉnh Quảng Ngãi
Diện tích tỉnh Quảng Ngãi hiên nãy khoảng 5100 km2, dân số được tính tới hiện nay là khoảng hơn 1 triệu 200 nghìn người, đơn vị hành chính gồm có 13 huyện. Hiện nay ở quãng ngãi thì có khoảng 4 dân tộc sống chung với nhau là kinh, hre, co, xơ dăng.
Quãng ngãi là 1 tỉnh thuộc duyên hải Nam Trung Bộ phía bắc giáp Quảng Nam , phía tây giáp tỉnh Gia Lai Kon Tum và phía nam giáp Bình Định và phía đông giáp biển Đông.
Địa hình Quảng Ngãi đồi núi chiến 3/4 điện tích , sông suối được phân bố đều trên khắp thành phố , phần lớn thì sông ngòi được bắt nguồn từ dãy Trường Sơn đổ ra biển đông, các con sông này thường ngắn, dốc, lòng sông cạn hẹp, lượng nước được phân hoá rõ rệt theo năm. Quảng Ngãi có 4 dòng sông chính là sông Trà Bông , Trà Khúc , Trà Câu, Vệ. Vì Quảng Ngãi nằm giữa cao nguyên và biển đông nên đất đai ở đây rất đa dạng và phong phú, có nhiều loại đất khác nhau như đất cát biển , đất mặn , đất phù sa , đất xám đất đỏ, đất đen v.v….
Sông trà khúc lớn nhất tỉnh Quảng Ngãi, bắt nguồn từ cao nguyên KonTum hợp lưu từ 4 con sông nhỏ (sông Tang , sông Xà Lò , song Hre , RHin) nằm trên địa bàn khắp 5 huyện miền múi phía tây Quảng Ngãi (Sơn Hà, Sơn Tịnh, Tư nghĩa và thị xã quãng ngãi rồi chảy ra biển đông qua cửa Đại Cổ Luỹ và cửa Sa Cần. Theo thống kê thì sông trà khúc có tổng độ dài trên 200km , lưu vực trên 3250km2, gấp 1,5 lần sông trà câu , trà bồng và sông vệ. Vì vậy sông trà khúc có vai trò quan trọng trong việc chuyển tải lượng mưa và cung cấp nước cho khu tập trung đông dân cư . Tại sao lại có tên sông trà khúc? Vì âm Trà bắt nguồn từ ngôn ngữ người chiêm thành, còn khúc biểu hiện những khúc quanh đổi hướng của dòng sông.
Từ lâu đời nay sông Trà Khúc không chỉ gắn bó với đời sống sản xuất nông nghiệp của cư dân 2 bên bờ sông còn là nói giao thông buôn bán vùng miền bên cửa sông , nơi di chuyển xuất khẩu hàng hoá trong nước cũng như nước ngoài , ngoài việc giao thông vậ chuyển nó còn là nơi bồi đắp phù sa cho những cánh đồng lúa ven sông giúp tạo công ăn viêc làm cho người dân nơi đây chính vì vậy con sống này là điều kiện thuận lợi để phát triển, cũng có thể gọi đây là trục xương sống để thuận lợi cho thành phố hiện nay. Chính vì có tầm quang trọng cao nên người dân các tính như Thanh Hoá , Nghệ An , Thừa Thiên Huế và nhiều nhất là khu vực sông Thu Bồn (Quảng Nam ) đã di chuyển tới đây sinh sống và an cư lập nghiệp, vì vậy nhiều ngành nghề thủ công , công ngiệp đã xuất hiên giúp cho cư dân ở đây có công việc làm ổn định. Hiện nay ở Quãng Ngãi là 1 thành phố đang phát triển cả về các ngành nghề và cả về du lịch , hiện nay du lịch ở quang ngãi phát triển mạnh cảnh đẹp thập nhị cảnh và phát triển mạnh nhât là bán đảo Lý Sơn.
Trước khi bước vào thị trấn quảng ngãi theo quốc lộ 1A thì chắc chắn chúng ta sẽ đi ngang cây cầu Trà Khúc, cách đây vài năm trước cầu trà khúc là nói giao thương buôn bán trọng tâm của Quảng Ngãi giữa Bình Định và Quảng Nam, hiện nay do quá lâu năm và chân cầu bị bào mòn nên cầu có nguy cơ bị sụp đổ nên Uỷ ban Quảng Ngãi đã cho xây dựng cầu trà khúc 2 nhưng hiện nay ở cầu trà khúc 1 dưới chân cầu có xuất hiện nhiều quán ăn qán nhậu cho những bác tài khi đi ngang qua đây dừng chân. Do nhu cầu phát triển tăng cao của Quảng Ngãi thì theo dự tính thì Quảng Ngãi sẽ cho xây dựng cầu Trà Khúc 3 vào thời gian gần tới để thuận tiện đi lại cho người dân và đẩy mạnh phát triển cho thành phố.

II. Đặc sản Quảng Ngãi
Đến với Quảng Ngãi, ta không thể không nhắc đến các loại đường – một trong những đặc sản nơi đây. Đường phèn cũng làm từ mía như bao loại đường khác, nhưng đường phèn được thêm trứng và nước vôi và công đoạn chế biến đường phèn cũng phức tạp hơn . Đầu tiên người ta nấu sôi đường cát lòng trắng trứng và nước vôi lại với nhau, sau đó đợi khi sôi đủ đọ thì vớt sạch bọt ra và thả những sợi chỉ giữ thẳng vào. Sau 1 thời gian đường sẽ kết tinh lại và có màu trắng hơi đục, ghồ ghề. Sau đó họ bỏ những sợi chỉ trước đó bỏ vào kéo ra hỏi hỗn hợp và để khô.
Đường phèn thường được dùng làm gia vị , khai vị trợ tiêu hoá và đường phèn có thể trị 1 số triệu trứng của cơ thể con người như viên phế quản, ho khan, và ít đờm theo thống kê tới nay của nhiều hộ gia đình thì đường phèn là loại đường rất tuyệt để chế biến các món ăn. Đường phèn giúp các món ăn có vị thanh và thơm ngon hơn, đặt biệt là các món chè nó giúp những chén chè ngọt ngon và mát hơn.
Và loại đường thứ 2 muốn giới thiệu tới là đường phổi. Tại sao có tên và đường phổi? Vì nó giống lá phổi. Đường phổi có màu trắng vàng mịn xốp thơm ngon và sạch sẽ, cách làm đường phổi thì cũng giống như làm đường phèn, cũng dùng đến đường cát và lòng trắng trứng nhưng lại có thêm dầu lạc và chanh . Khác một chút là thợ đường phải đánh đều tay và số lượng dầu lạc tăng gấp đôi so với đường phèn. Sau khi nung nóng vớt bọt và để nguội thì dùng dao cắt thành từng miếng cho vào các tuí ni-lông buộc kín để tránh gió vào và giữ cho đường luôn cứng giòn, khô sạch.
Còn một loại đường mà khi đến đây ai cũng biết và muốn mua về làm quà đó là đường mạch, thường được gọi là kẹo mạch nha. Là 1 loại đường dẻo nhưng không dai có màu vàng sậm, ngọt thanh, thơm ngon mùi nếp bổ hợp với người đau dạ dày và đối với trẻ em thì sẽ trị ho. Nguyên liệu chính để nấu keo mạch nha là lúa, chọn lượng lúa khô vừa đủ và đem ngâm với nước ấm , sau đó đem ra xã với nước sạch nhiều lần cho trôi đi chất nhờn và bước kế tiếp là họ đem đi ủ với đọ ẩm thích hợp để lúa đâm mộng , lưu ý ở đây là những người làm đường mạch là phỉa lựa những lúa chắc hạt mới cho ra mầm tốt nhất. Sau khi ủ thì bưỡc kế tiếp sàng lấy mần đi phơi khô và đem đi nghiền nhỏ thành bột. Bước kế tiếp là lấy gạo nếp ngâm với nước và sau đó hấp thành xôi, đổ xôi ra khay lớn và để cho nguội, sau khi xôi nguội thì trộn xôi và bột mầm lúa xay sẵn sao cho tỉ lệ phù hợp (thường thì tỉ lệ ngta dùng 5 - 6 kg xôi và 1kg bột mầm lúa). Sau đó dùng 1 lượng nước đủ độ, bật lửa nhỏ và đem đun hỗn hợp vừa trộn sao cho hỗn hợp sôi từ từ , trong khi đun phải khoáy đều tay. Khi đã sôi đều lại tiếp tục để nguôi và sau khi nguội thì ép hỗn hợp và bỏ xác và chỉ lấy dung dịch tinh chất , tiếp tục lấy dung dịch nguyên chất nung với lửa nhỏ khuấy đều tay cho đến khi tinh chất lọc ra kẹo lại có màu vàng trong là được. Trải qua nhiều công đoạn cầu kỳ phức tạp thì cũng tạo ra mạch nha tinh khiết . Nấu mạch nha rất phức tạp chúng ta phải làm theo trình tự và tuân thủ đúng quy tắc thì mới tạo ra mạch nha ngon. Để nấu được món này ng làm phải có tính kiên trì và tâm huyết với nghề mới tạo ra những thành phẩm ngon và tuyệt vời. Mạch nha ngon nổi tiếng nhất hiện nay được xuất với số lượng lớn là thuộc làng Thi Phổ , Huyện Mộ đức quảng ngãi, để thưởng thức mạch nha ngon miệng thì phải ăn kết hợp với bánh tráng và đâu phộng rang.

Hiện nay các lò sản xuất mạch nha thường có bán thêm loại mạch nha đậu phộng và thường thì nhắc tới Quảng Ngãi ai cũng nghĩ tới mạch nha và ngược lại .
