Butchering and processing your own game is a skill well worth having especially once the SHTF. Some hunters take their game to a butcher shop, but can you be assured of the quality and expertise of the butcher, who may or may not be accustomed to processing wild game, and some hunters have been shorted on the weight, so you do have to choose carefully where you take your game.
